Battered Scallop Forest

St. Patrick's Day is just around the corner, and we've got the perfect dinner. When Irish celebrity chef Kevin Dundon introduced the Scallop Forest at Raglan Road in Disney Springs, he gained an instant following in America. Served on individual forks, the tender, succulent scallops have become one of the restaurant's favorites. Surprisingly, they're not that hard to make. Make the batter, dredge and deep fry  — that's all there is to it. Made with Lighthouse Seafood U-10 scallops, which weigh in at an impressive ounce and half each, a couple of these will have you shouting "Sláinte."

           INGREDIENTS

            METHOD

12 fresh scallops, coral removed

1/3 cup seasoned plain flour (with salt and pepper)

Salt and pepper

1 cup soda water

12 ounces of lager (Harp, please)

1/3 corn flour

1 cup plain flour

2/3 cup of mayonnaise

3 Limes, zest & juice

1 tbsp Fresh snipped Chives

To make the lime mayonnaise, place the mayonnaise in a bowl and add the lime juice and zest, combine well and refrigerate until required.

In a large bowl sieve in the flour, corn flour, salt & pepper. Pour in the lager and soda water and whisk until a smooth batter is achieved.  Allow to rest at room temperature for approximately half an hour.

Preheat a deep fat fryer to 350°f

Dredge the scallops in flour to coat, shake off excess flour

Dip the scallops in the batter, shake to remove excess batter

Carefully place the scallops in the hot oil

Cook for about 4 to 5 minutes until golden, remove from the oil and place on kitchen paper to drain, season with salt and pepper. Serve immediately with lime mayonnaise
